From dips to pasta, risotto, soup, and more, we’ve got you covered.

Hey Internet, mushrooms are one of the most important things to be familiar with when cooking vegan. Sure, soy curls, tofu, and seitan can be delicious, but there are times when you can’t get those things. Meanwhile, mushrooms are pretty much sold almost everywhere and you can use them in so many interesting ways. Mushrooms can be easily turned into a meat substitute or be used in a way that embraces their earthy nature.

And there are so many different types of mushrooms too! They have different textures and tastes. For example, Lion’s Mane mushrooms have a seafood, almost shellfish taste while fresh Shiitake mushrooms have a strong umami and meaty flavor. And this is before we get into different cooking methods to transform them even more.

Personally, we really like Portobello mushrooms, while they are technically the same as Baby Bellas and crimini mushrooms, they are just picked at different times, there’s something juicy about a Portobello. We use them to make vegan Portobello steaks and serve them as a main. Liz also has made Portobello pizzas out of them on their new blog Fit Liz Kitchen, so you can do a lot with them.

Anyway, let’s get into the basics of mushrooms.

What Sort of Mushrooms are There to Cook With?

So one of the most common mushrooms is the button mushroom. In fact, there are three versions of button mushrooms; they are just picked at different stages of development. Button mushrooms are picked when the mushrooms are young, while cremini mushrooms (also known as Baby Bella or brown mushrooms) are allowed to mature just a bit more. Finally, Portobello mushrooms are the fully matured version of this group of mushrooms.

Because of this and the fact that these mushrooms are easily farmed, a lot of recipes make use of these mushrooms. We tend to see them even in the smallest of grocery stores where we are (although sometimes it’s more about if a grocery store is more veg forward or not).

While they can be eaten raw (make sure to wash them), you can take their flavor up a big notch just by chopping them up into slices and sautéing them in a pan. Just add a pinch of salt and some garlic and onion powder (or try a splash of low sodium soy sauce or gluten-free tamari instead!) can go a long way! You’ll want to cook them until they are browned and have shrunk down a lot.

Mushrooms have a lot of water in them and they tend to shrink quite a bit, which is why cooking them down can really improve their texture. We do this a lot with the button and cremini mushrooms we buy.

But there is more that can be done with buttons, creminis, and Portobellos. For starters, they can make for great sauces and dips. Our vegan mushroom pâté uses brown mushrooms (which is yet another name for cremini mushrooms) to make a super umami snack. We’ve also used cremini mushrooms to make a super flavorful vegan mushroom gravy (internal link). Another great appetizer is our bite-sized vegan stuffed mushrooms (internal link), which are loaded with garlic, shallots, and vegan parmesan cheese.

As for Portobellos, we have our juicy Portobello mushroom steaks for an easy main course. But Liz recently did these amazing Portobello Pizzas using our vegan mozzarella. We’ve even made Portobello bacon which goes great in a BLT or our vegan carbonara!

There’s so much more you can do with these guys too, but let’s leave that for below. Let’s talk about some other mushrooms.

Wait, There’s More Mushrooms?

Yes! Some of these are a little harder to find, while others are super seasonal. One that we use a lot is shiitake mushrooms. They are a bit more dense and chewy, with an earthy and umami flavor to them. They are originally from Asia, being primarily used in Chinese and Japanese cuisine.

Appropriately, we’ve made this amazing vegan udon noodles that makes use of the shiitake’s meaty texture. It’s really easy to make! They also go great in our vegan tom kha, adding to the flavor punch in that soup recipe.

King oyster mushrooms are another Asian mushroom that that make for a great meat substitute. These mushrooms are big and trumpet shaped. When cooked, they release an umami flavor. We use king oyster mushrooms in our vegan scallop pasta that we serve with garlic sauce. They're really quite good! It also can be made into a pulled meat replacement, like this BBQ Vegan Pulled Pork Sandwich.

Enoki mushrooms are little guys that come in big groups. They are mostly water and contain very little fat. This makes them prefect for healthy, earthy dishes, like this Easy Vegan Pho recipe. They can be also used to make healthier version on savory treats, like these Crispy Fried Enoki Mushrooms.

These mushrooms, while a little less common in the supermarket, are still cultivated around the world. There are mushrooms out there are are real special treats that are super seasonal and will likely require you to go to the right farmers market to find them.

Chicken of the Woods is a great example of this. It's a mushroom that tastes and feels a lot like chicken. It's used to great effect in this Cream of Chicken of the Woods recipe. There's also shrimp of the woods that tastes just like shrimp. This sweet and garlic vegan shrimp recipe is great with some pasta!

Is There Anything I Need to Know About Working with Mushrooms?

Like with any produce, you really need to wash mushrooms before you use them. I would recommend having a mesh strainer to wash them in. What we do is separate the mushrooms we are going to use for cooking and place them in the strainer. Be sure to check to see if any of the mushrooms have any mold growing on them. Toss them if they do.

Then after a quick rinse of all of them, we take each mushroom and scrub them under running water and then place them on a separate side of the strainer. You want to make sure that any slimy feeling on the mushrooms is coming off. If the feeling doesn’t go away or you feel a lot of softness in a mushroom, it has likely gone bad and needs to be discarded.

Once you have them washed, the sky's the limit with these guys. A good cutting board and some great knives are always a must for any cook and there’s so much you can do with that and a good nonstick skillet. To make things like our vegan pâté, you’re going to need a food processor.

Not everyone in the culinary world agrees with washing mushrooms. Many folks swear washing them waterlogs the mushrooms and they just wipe them with a damp cloth or a paper towel. We’ll leave that decision up to you.

One quick thing to note is that while there are many foragers that go out to forests to gather their own mushrooms, we at ZardyPlants cannot recommend or condone such activities. We are not trained mushroom foragers and there are dangerous mushrooms out in the world and can seriously hurt or kill you. If you wish to explore this route, we suggest you take some courses or learn from a local guide, if you can find one. And if you buy mushrooms from a farmer’s market, it’s always good to ask from the stall owner where they get or grow their mushrooms from. Most are very willing to tell you!
